A Summery Lunch Treat

 

I have to thank my Aunt Jane Sugar for this meal. Last week while in Perdido Key, she sent out this treat to the beach. I could not get enough of the mixture.

Like with any great cook, amounts of ingredients are not known. In the words of Sugar, you take a lil bit of this and add a lil bit of that. You get it!

The ingredients are:

  • 1 packet of tuna {I use Starkist white albacore white tuna packs.}
  • Half of a cucumber, chopped
  • Trinity {I buy the prepared chopped onions, celery, and bell peppers.}
  • Pickles {I used Wickles, wickedly good pickles.}
  • Bacon Bits
  • Shredded carrots
  • Craisins
  • Hummus {in place of mayonnaise}

Mix all together in a bowl. I add cracked pepper to taste.

Fill a bell pepper, add shredded carrots for garnish, and voila!

Though I used tuna, I also suggest chicken/chicken salad.

It is simply to prepare, and easy to add or subtract ingredients. I even like it on tortillas.

  1. What a pretty presentation! If you ever have leftover tuna steak, use it in this salad. It will bring this salad to a whole new level, and you may never use canned tuna again! Have a great day! xoxo

  7. That does, indeed, look divine. I would use chicken since I "don't do" fish...but HUMUS ?
    I've never tasted it so can I just use mayo ?? Still be good ?

  11. Oh my word, that looks so yummy!! Perfect summer meal. Even better served on the beach. I am filing this away for those nights when I want something healthy, quick and does not require the oven!!
