I have to thank my Aunt Jane Sugar for this meal. Last week while in Perdido Key, she sent out this treat to the beach. I could not get enough of the mixture.
Like with any great cook, amounts of ingredients are not known. In the words of Sugar, you take a lil bit of this and add a lil bit of that. You get it!
Doesn’t this look divine?
The ingredients are:
- 1 packet of tuna {I use Starkist white albacore white tuna packs.}
- Half of a cucumber, chopped
- Trinity {I buy the prepared chopped onions, celery, and bell peppers.}
- Pickles {I used Wickles, wickedly good pickles.}
- Bacon Bits
- Shredded carrots
- Craisins
- Hummus {in place of mayonnaise}
Mix all together in a bowl. I add cracked pepper to taste.
Fill a bell pepper, add shredded carrots for garnish, and voila!
Though I used tuna, I also suggest chicken/chicken salad.
It is simply to prepare, and easy to add or subtract ingredients. I even like it on tortillas.

That does, indeed, look divine. I would use chicken since I "don't do" fish...but HUMUS ?
